Two San Jose, California Chicken Salad Recipes
I was born in the grand city of San Jose and in the great state of California and I wish to honor San Jose and California by posting these two San Jose, California Chicken Salad recipes. Enjoy!!!

Incredible Chicken Salad by Marc Rose

3 cups chicken breast (cubed)
1 cup pineapple (diced)
1/2 cup celery (diced)
1/2 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
1/8 cup dried cranberries
2 tbsp. sweet onion (minced)
2 tbsp. apple juice

Combine all ingredients in a bowl until well combined and chill. Serve with a lettuce garnish.

The second San Jose, California Chicken Salad recipe. Recipe credit is at the end of the recipe:

(2.) Holly's Famous Chicken Salad by Jaince Zajac

3 cups chicken (cooked and diced)
1 cup celery (diced)
1 cup seedless grapes (cut in halves)
2/3 cup to 1 cup mayonnaise
1/2 cup toasted almond slivers
1 (11 oz.) can mandarin oranges, drained
3 Tbsp lemon juice
1 Tbsp green onion (diced)
salt to taste
pepper to taste

Lightly toss all ingredients together. Chill at least 4 hours before serving. The chicken salad recipe is even better if it can be made the night before.
Servings: 8
Preparation Time: 25 minutes plus the 4 hours chilling time.

These sound delicious. I love chicken salad, so I am sure I will try at least one of these recipes soon.

I hope the nuts don't make or break these recipes. (I am not fond of nuts)but I love chicken salad. *yummm*
